Quinoa w Asparagus

"Question. What is quinoa?" LaLa

Only the best thing ever! I asked if her and Mark had plans and I invited them for dinner.

I made the quinoa like I would rice. While that was cooking I chopped and sautéed my shallot w asparagus and thyme (1tsp) Added a little water to let the asparagus steam. Once the quinoa was ready I added everything together. I squeezed lemon and tossed in some feta.

Now...what I would do different... I would have cooked the quinoa in vegetable broth instead of water. Pokey said it tasted bland. Which I guess it did but to me the flavors were light and fresh. It was good. I try to not cook w a lot of salt so I didn't use salt so I told them if they liked salt they could add it.

I roasted eggplant (typical) and had the left over meatless crumbles and mashed black beans.

Dinner was great w great friends.

Is your fridge a garden or a morgue?

Pokey and I love to grocery shop. It's what we do lol. I really love that he is cool w the fact that I'm not eating meat and don't care for it in the house. I feel it take up space and why do that when I can put veggies in its place!  First shelf: almond milk, black berries, cilantro, cherries, yogurt (his) apple sauce that my momma brought over for Angie's kids. I need to give that to her. And BEER!!! Bobby gave it to Pokey  Second shelf: Salad stuff. Spinach, spring mix, feta cheese, avocado and tomatoes  Third shelf: Green grapes, mushrooms and corn. HEB 5 for $1  Fourth shelf: Eggplant (Pokey's) red grapes, watermelon and cauliflower. Pickled jalapeño. Pokeys choice. Not mine "/   Vegetable drawer: Bell pepper, tomato, broccoli, cucumbers, poblano pepper and small red orange and yellow peppers  Counter: FRUIT!!! Bananas, pineapples, apples, pear, lemon and limes.  I LOVE COLOR!!!! 

21 Day Sugar Detox

Monday after Super Bowl some friends and I started this detox. I was nervous, excited, anxious and scared. I didn't know what to expect. It went well.  I are a lot like this. No sugar meant no bread or processed foods. I lost 9lbs. It felt good. It did change my way of thinking about sweets. I don't crave them. I guess that was the point lol.  I'm glad it's over but I've been following the diet for the most part.
