Open Faced Sandwich

This has been a busy good week. 
Today was a good day a work. Came home. Went grocery shipping. Rode bikes w the kiddos. Yard work w Pokey. Busy day. 
Dinner I had to keep it raw and simple. I toasted some wheat bread then spread hummus all over lol. One side I used half and avocado w old bay seasoning the other side I used spinach and a tomato. This hit the spot! Idk if I was craving strawberries but these were THE best strawberries I've had in a while. The grapes were fresh too. Dinner was great. Pokey is making himself salmon. We totally made our own dinners lol.

Jackfruit "beef" Stew

  SATURDAY WITH MY PARENTS! Pokey went fishing and I went grocery shopping. I love to hang out with my family. I love them with my entire heart. It's May!

I was texting w La and we were talking food and what not. Anyways. It dawned on my that its May. I'm going into my fifth month of being like 90% vegan. It's funny because its not like that 10% is milk and cheese. It's Chic Fil A! Lol. Their sunflower bagel chicken breakfast biscuit is crack! At work we had a luncheon and they make the best steak. I had a couple of bites and I gave it to Patty. I didn't have a taste for it..what...crazy in know. Another time we had family over and I bought barbacoa and carnitas. I was so sad face. The barbacoa was not delish to me any more. Carnitas were great but I could do w out. I just was always a fan of pork. But I haven't had bacon yet. Go figure. We started this journey w juicing. And then after I thought "no meat/dairy" till the end of March. I wanted to get blood work done to see if it was worth it. It was. I lowered my cholesterol by 13 points! I think that's great. Quinoa Burgers

This was my first time making these burgers. Honestly they kinda intimidated me. I've read a bunch of recipes and I kinda came up with this one. Once I made them I realized I can use any ingredients and still make this awesome. This made 12 patties.   I put 2 cups of quinoa w 2 cups vegetable broth and 2 cups water in the rice cooker. I had a can of chickpeas in the pantry so I rinsed those and put in a pot to boil. The spices are dried thyme, cumin, dried cilantro, and minced garlic. The flour is for later. I chopped parsley, carrots, celery and bell pepper. saute the veggies and spices Once the quinoa and chickpeas are done put 1c of quinoa and 1/2 of the chickpeas on the side. Put the rest in a food processor with the veggie mixture along with the flour (2tbs). Pulse it but not too much. You dont want mush.
