Kale smoothie

I love my ninja. I use this everyday.  1 mango 1c kale (I used baby kale)  1/2c frozen peaches 1 orange  4c vanilla almond milk  Blend and enjoy.  Green is my favorite color. 

Broccoli "rice" and cheese

Sometimes you want comforting food. This day was one of those days.  I love broccoli rice and cheese. I try to stay away from rice. I used cauliflower instead. I used the ninja to chop everything up.  1 bunch of broccoli 1 head of cauliflower  Sauté w salt and pepper.  Cheese sauce 1c almond milk (plain) 6 tbs nutritional yeast 1 tbs of non butter Garlic powder to taste Onion powder to taste Salt/paper to taste  Put milk in a sauce pan and add the ingredients until smooth. Pour on the broccoli and cauliflower. Enjoy! 

Tofu noodles

I love the ninja w the food processor part. I chopped mushrooms, bellpepper and squash.  Looks kinda like slaw.  I put in the pan w coconut oil and sautéed it.  Ok. These tofu noodles are everything!  No cholesterol, gluten free and vegan. Win win in my book.  The noodles you rinse and then cook in boiling water for 3 minutes. After that put noodles in the pan w veggies.  Dinner is served!  

His and Hers Smoothies

I've really become a fan of the ninja lol.  Kale, blackberries, blueberries and mango.  His and hers lol.  I'm a fan of smoothies and juicing. 

Kale and orange smoothie

This is good. I made it for lunch tomorrow.  The left overs I drank.  Handful of spinach  Two oranges 1c of almond milk  Blend and enjoy 

Cauliflower and lentil patties (leftovers)

I knew while I was eating last night that I wanted to make these into patties for burgers. We don't own bread lol. So a patty w sautéed kale and onion w garlic will do. Lol  I had about two cups of cauliflower mixture left over. I added 1/2c of breadcrumbs. You can eyeball it though if you like. Add different seasonings if you like too. Something that would compliment what you already got going on w the cauliflower. I used a 1/2c to scoop out the mixture. I wanted to keep them the same size.  I put in the oven at 350 for 20 min. Half way thru flip.  While those were baking I sautéed onion garlic and kale.  I also ate the spoonful of what was left :)  This is good. Make it. You'll love it. This would be amazing on bread too. Toasted bread. We just don't have any. 

Cauliflower and lentil tacos

Meatless Monday!!! I was watching a show on Cooking Channel 'How to live to 100' and they made cauliflower tacos. I put my own spin on it ofcourse.  Add cauliflower to the food processor and break it down until it's kinda like mashed potatoes  I ended up having to take some of the cauliflower out. I cut an onion up and put it in the pan to brown. I didn't use any oil at all in the recipe. I have an awesome pan lol.  I added the cauliflower and burrito seasoning to the onions.  On the show they used a can of tomatoes but I blended my own.  I mixed everything together to let the water cook out.  I boiled lentils and added it to the cauliflower.  Mixed it all together and cooked the water out some more.  I love corn tortillas. I used them. Cut up some cilantro and limes and put some Valentina on everything. They are so good! 

Spinach Pancakes (the lazy way)

Last night was great! We had left over spinach. I used it to make pancakes.  2c bisquick  1c coconut milk Handful of spinach 1 tsp vanilla  2 tbs sugar  Add coconut milk and spinach to a blender and blend it. It will be a pretty light color green. In a bowl add the milk and spinach with the bisquick. Mix together. Next add the vanilla and sugar.  It will look like this. I love this. You know how to make pancakes. Once you start to see bubbles around the edge you flip :)  I'm so glad they tasted good. You can't taste the spinach. Spinach has such a light taste anyway. Delish.  Strawberries and powdered sugar. Why not?! Lol.  I added agave and they gave them a nice chocolate taste. Go figure.   Enjoy! 

Pumpkin Curry Vegetable Stew

I love fall for all the squashes. Today we bought pumpkins, acorn squash and butternut squash.  I was trying to think of what I should make tonight. The weather was nice today. Kinda chilly. I was thinking soup but I found this recipe for a stew and I said 'sure why not'  1 cooking pumpkin  1 carrot 2 tomatoes  1onion  1plantain  2 cloves of garlic 3 white potatoes 2 tbs oil 2 tbs curry 1/2 tsp cinnamon 1/2 tsp ground ginger (I know I have raw ginger in the pic but the recipe called for ground) 1 scotch bonnet  1 1/2c water  Salt and pepper to taste  I chop everything before starting. That's just me. Chopping calms me. I love it.  In the pot put the oil onion and garlic until translucent. Then add the tomatoes w the spices. It will look like a paste because the tomatoes sweat. Mix well. It forms like a nice paste. Add the pumpkin, potatoes, plantain and carrot and coat the veggies. Add 1 1/2c of water. Bring to boil then simmer w a lid o...
