It's all fun and games until someone gets hurt.

This is our 5 mile rest stop. Nice huh.  I really enjoy riding. It clears my head. It's a good way to end the day. Plus it's quality time for Pokey and I to disconnect from the world. (Notice him on his phone...ha!)  We were almost home and I fell. This time it wasn't funny. I was actually mad as hell! I wasn't cut by anything but dirt! Dirt! I was riding extremely slow. Kinda just rolling on my tires. Well my tire hit a truck tire groove and my wheel was like "nope" and I fell in slow motion. I was upset to say the least. I'm messing up my legs w these scars!  At least I sweated. That's all that counts. 

Meatless Monday a day late

I started my day watching my nieces and nephews. Jacoby was fighting sleep bad! I won!!  Yesterday was cool. My sister in law Clarissa was on vacation and my cousin Bejan was on vacation. Everyone came over. Party at my house! What do you do when people come over? You eat! I made a veggie hash of sweet potatoes, poblano, onion, corn, squash and zucchini. Clarissa made some bomb ass fire roasted salsa. Everything was good. Do you see the avocados....nom nom noms  So what do Mexicans do...make tacos...I had two tacos and by the time I remembered to take a pic I just served myself some more veggies. Dinner was cool. Bejan and Lili brought salmon and sausage and Pokey and Bejan grilled it along w some veggies.  Clearly you know what I ate lol  Dinner was great. We haven't grilled in a while. Makes me smile. 

Watermelon and Yogurt

Yesterday we went riding. It felt so good!  After a ride or work out I know it's important to eat. I'm usually not hungry at all. But I force my self.  Pokey sliced watermelon for me!!!! Refreshing. That was dinner. I didn't want anything heavy. Maybe a couple of hours later I was hungry again. It happens. I ate yogurt w chia seeds and agave w a sliced pear. It was so delicious.  It was just what I needed. Pokey put on a scary movie and I forced myself to go to sleep. I don't like scary movies. I feel I'm to grown up to scare myself lol  P.s. don't mind the bruises on my knee. That's just from riding. 😉🚴💨

Mexican Flat Bread "Pizza"

The only reason ill call this pizza is because I bake it lol.  1/2 onion  4 baby portobellos Handful of cherry tomatoes  This is all I used. I need to go grocery shopping. 😒 I sautéed everything in a pan. I lightly sprayed the pan w an olive oil spray.  Sazon and black pepper. That's all I used. Sazon is saffron. This seasoning is not salty I love it. I really try not to cook w  salt.  I bought this at HEB but I'm sure you can find it anywhere. It's multi grain, high in fiber and has protein. What else can I ask for lol.  On a cookie sheet I spread beans on the flat bread and then sprinkled my veggies on top.  Baked at 350 for 20 min. Jut enough time to toast it and the center was toasty not soft.  Garnished w cilantro lime and Valentina hot sauce. Yum! 

Midnight snacks

Ok so maybe not midnight but it was after dinner.  Peanut butter sandwich w cinnamon. And a glass of chocolate almond milk. I thought it was good. Then here comes Pokey w his snack...  Melon and grapes. Now his trying to show out lol. I should have ate fruit but damn it I wanted peanut butter.

Meatless Mondays: Smoothies y Tostadas

First let me say...I suck. It rained all week last week and I did no fitness at all. This week no excuses. I mean look. We have mushrooms in the front yard! So much rain.  My camera was being wonky. But Lily and I drank a chocolate almond smoothie w strawberries, bananas and spinach. We walked to Angie's house.  Lunch at my house. I made tostadas.  Sauté mushrooms, onions, corn and tomato w potato. I had Angie make the beans for me. So spread beans then load the tostada w veggies.  I put cilantro w lime and avocado.  After lunch we hung out for a whole them walked to the park. Penn wanted to go. We went for an hour. It was fun for a while. Came home and made a smoothie lol.  Peaches  Mango Spinach Bananas  Almond milk  I love that the smoothie is green lol.  We are going riding tonight. Stay tuned. Lol. 

Meatless Mondays: Tacos!!!

I can't hide my Mexican-ness lol I love tacos.  1 case of mushrooms  1 ear of corn 1 zucchini  1 squash  1 onion  1 poblano   Start w the onion and poblano. I didn't use any oil or spray. The veggie will sweat. It will be ok as long as you use a non stick pan.  Add the mushrooms (I love mushrooms) Slice the zucchini and squash add it to the mix  I cut the corn off the cob. I actually prefer corn this way. It's so sweet.  The only seasoning I used was black pepper. Keeping it simple.  I'm in LOVE with avocado. No judging that I used the ahold thing!  Look how amazing this looks. I took the picture then I thought...  O snap! I need cilantro and lime! It was so good. I love tacos. The tortillas are whole wheat.  

Green Juice

I love juicing. I feel like I've been slipping. Not juicing as much as we used to.  I took 2L to work and had it for breakfast/lunch.  After I drank a glass of juice I drank a glass of water. I was full. I felt great!  I love what my skin looks like afterwards.  Spinach Kale Cucumber Pear Apple Celery  Lemon Lime :) 

Angie went riding w us today!!!

Lunch was amazing. I've been drinking smoothies and eating raw for the most part. I just feel good when I do. I made a peanut butter sandwich w cinnamon. :) my smoothie Pokey made it. Apples spinach blueberries as strawberries.  Angie went riding w us!!! We had fun.  Dinner we went to Asian City. Everyone knows I'm not really a fan of Asian food. Womp. But Pokey wanted it. He ordered me curry veggies. I asked him to surprise me.  Laying in bed. Tired. Good. Day. 

Today was a good day.

Lunch today was great. So refreshing. I feel like I've slacked in my healthy choices. Pokey and I are doing smoothies and eating more raw food for the most part. Lunch was a peach spinach and strawberry smoothie. Sandwich was hummus cucumber and spinach. So delish.  Let me start by saying I'm o so proud of Sonner. He rode 13+ miles today! He is so bad ass! Didn't complain once! Just said he was hungry. I was hungry too!!  Dinner was simple. Peanut butter sandwich and another smoothie. 

Meatless Mondays: Gonzales Edition

Mimi, Sonner and Penn spent the night last night. I had them for breakfast and lunch.  Penn woke up extra early. Like 6am early. I gave her cereal w coconut milk. Mimi made pancakes. Vegan of course. She added cinnamon to give them a great taste. I love cinnamon. For lunch Mimi and Sonner made quesadillas and had fruit. I was so proud. They didn't even ask for chips. I guess they already knew I didn't have any in the house. They picked their own fruit for their side.  Of course you know there was smoothies involved. She made a strawberry smoothie.  The left over veggies we had for dinner last night made a burrito out of it. So good. Today was a good day. 

Veggie tacos

I've been eating junk all weekend! Ugh!!! But I told Pokey we need to get our life right lol. We went grocery shopping. We haven't gone since before Cali. Literally had broccoli and celery in the fridge. That's it. Ty and Robert came over to hang out for a while. It's been forever. I made veggie tacos. They were just what I needed.  1 zucchini 1 squash 1 onion 1 bell pepper (green, yellow and red) 1 poblano  I sautéed every thing. Then heated up tortillas on the comal. Garnished w lime, avocado, cilantro and valentina on top. So good!!!

We were in Cali and then I work the very next day early at 7. We got home at 2:30a! Omg so tired. This food is from Friday. Phillip and Clarissa came over. All four of us went riding. It was fun. I came home and cooked. Spinach, chick pea and tomato. So good.

We did 10.5 miles today !!! Woo Hoo! I needed it! We ate very well this weekend and I was so happy to work it off.
