smoothie day

My friend Andra inspired/reminded me how great smoothies are. They are a meal in a cup. You get your veggie and fruit intake super easy. Just drink them. This morning I made a smoothie for Darby and I. We work together and she's doing baby steps in going plant based.  Berries, mct oil, hempseeds and almond milk We went for a walk/jog/run. He wanted to go. Then didn't. Then did and liked it I promise. I came home an made us a post work out smoothie. I love me some hempseeds and flaxseeds.  Regina 

chickpea salad

I knew I wanted chickpea salad and I knew I wanted some nuts and seeds in it for texture but I was hung up on making it. I don't know why.  I've made chickpea salad before. I asked Pokey for reassurance and he said go for it.  I really try to keep food simple. 1 can of chickpeas drained and and 1/4 onion and everything else was eyeballed. I chopped the onion up in the food processor then added the chickpeas w the walnuts, flaxseeds, hempseeds and sunflower seeds. I eyeballed the vegan mayo and used nutritional yeast, salt and black pepper.  Mixed everything up and I had him taste it. Parsley flakes. I was missing parsley flakes.  Open faced sandwich. I sprinkled red pepper flakes for a little kick. This is my lunch for tomorrow. I can not wait! It's going to be delish!  Regina 

brussel sprouts, walnuts and quinoa in a lemon vinaigrette

We haven't gone grocery shopping this week because we partied all weekend. Lol. So now I'm looking in the freezer and we have three bags of brussel sprouts. I roasted the brussels and walnuts in the oven.  Brussels at 400 for 20 min and the walnuts at 375 for 5. The quinoa I made it simple. 2c water 1c uncooked quinoa. You cook it like rice. I zested the lemon and juiced the whole lemon and whisked it into 1/4c of olive oil. I also tossed in red pepper flakes.  It taste really good. Lunch for tomorrow too.  Regina 

tofu scramble

I've been wanting a tofu scramble for like a week. There are many ways to make a scramble. I try to keep it simple. My cousin Moorsey is trying to make more vegan choices. I sent him this today. Pokey made him some tofu earlier and he had some left over.  I chopped a whole onion and minced garlic and sautéed it.  I crumbled the tofu w a wooden spoon. You can crumble it as big or little as you want. I try to keep it medium lol I couldn't find turmeric in the cabinet so I used chicken fajita seasoning. It's a spice mix. Sprinkle what you like.  I used a little oil to sauté the onions and garlic. The tofu will stick to the pan a little. Just use veggie broth to make  it come off the pan.  I A handful of spinach and it simmered down into this.  Spinach tortilla wrap to make a burrito. Delish. I usually use the left overs for lunch if he doesn't finish them.  With scrambles you can use any veggies you want. Any seasoni

hello again

It's been some time. This past weekend we celebrated my 39th birthday. We went to Boondocks and danced the whole night. It's was 90's dance party. We kicked it!  I may have drank too much but you only turn 39 once. Sunday the 13th was my actual birthday. Midnight I danced into 39. Sunday we celebrated my bday at my parents house.  A sweaty mess.  We smoked some pizza on the pit. I didn't take pics of that but I will post some pics of pizza later. My sister Angie made me a vegan carrot cake. It was the best most deliciously dense cake. I didn't take pics because I Snapchated everything. Lol. Starting today I'm going to post my food. Keep in mind I don't really measure anything. I'm a self taught cook. I eyeball everything   Regina.
