I'm starting to use quinoa a lot. I'm ok with that ;)
You can add whatever you like to stuff your bell peppers. I chose carrots, onions, meatless crumbles and quinoa. I baked the stuffed bell peppers at 350 for 30-45 min. I used vegetable broth and water to fill up the baking dish. Enough liquid to go up half way of the bell pepper so the pepper can cook and not dry out. I added cheese to all but mine. :)
