My favorite forever and always

I love love love the combination of banana and peanut butter w chocolate. I make this combo in my over night oats and in a smoothie.  I  use a dehydrated peanut powder. It's amazing. This chia and flax seed blend it good too. I got it at HEB. I love this smoothie! 

Quinoa w Bell Pepper and Squash

I love cooking. I'm glad things are getting back to normal so yay me!  I chopped it all up and sautéed while I cooked the quinoa in vegetable stock. I added a little cumin. That's it. No pepper or salt. Kept it simple.  Pokey said he didn't want any. That he wasn't a fan of quinoa. Whatever...he ate lol. 

Juicing again

We went grocery shopping and we noticed we had grapes already. I made grape juice.  Lunch tomorrow green juice. My fav.  My least fav. Beets. Lol.  I love juicing. I feel so good when I do. 

Tio I want a smoovie!!! Penn

This little girl has her Tio (uncle) wrapped around her itty bitty finger!  She knows that when you come to our house she will 9 times out of 10 get a smoothie or some kind of fruit.  She asked for a "smoovie". She didn't ask me. She didn't want it from me. She wanted it from Tio Pokey. Lol. He made her a strawberry and almond milk smoothie.  It was a nice day. We sat outside and kicked it.  Stella was licking some of the smoothie Penn spilt on her dress.  I love my family. 

Berry Smoothie

I haven't been eating "dinner" it's more like smoothies. I'm lazy and tired at the moment and the easiest thing for me to do is make a smoothie. No judging.  His and Hers Smoothie: blackberry, strawberry, blueberry and chia seeds w almond milk. All the berries were frozen. I didn't measure. I just eyeballed it. I made enough for 2 16oz glass jars. 

I've been MIA

So much has happened. I've been stressed, tired and borderline going crazy. I'm exagerating but still...busy.  The month of October was CRAZY to say the least. At work we let a girl go. Hired a new girl. Let her go. Then let another girl go. Yeah...that happened. We have one girl on maternity leave and won't be back till mid November. We have hired two girls. I feel they are going to work out. I hope they do. I like them both.  Remember school? Yeah...I haven't been in 3 wks. At work we are short staffed and I've been closing and training. I haven't made it to school. I feel really bad about that.  I notice when I'm tired or stressed my right eye twitches. It's sort of become a joke. It's not funny :( lol Cleo we had her for 9 years (she was 11) passed away this Monday. We had to put her down. My heart was broken. She had cancer in her jaw and tumors in her chest. She lived a great life but it still hurts.  We knew she was getting up there in age and

Pick me up smoothie

I'm feeling like I'm getting sick. I really feel like its allergies.  Pokey made me a ginger, wheatgrass, peaches, blueberries, oranges and strawberry smoothie. It was delish! 

Pumpkin Curry Vegetable Stew

I love fall for all the squashes. Today we bought pumpkins, acorn squash and butternut squash.  I was trying to think of what I should make tonight. The weather was nice today. Kinda chilly. I was thinking soup but I found this recipe for a stew and I said 'sure why not'  1 cooking pumpkin  1 carrot 2 tomatoes  1onion  1plantain  2 cloves of garlic 3 white potatoes 2 tbs oil 2 tbs curry 1/2 tsp cinnamon 1/2 tsp ground ginger (I know I have raw ginger in the pic but the recipe called for ground) 1 scotch bonnet  1 1/2c water  Salt and pepper to taste  I chop everything before starting. That's just me. Chopping calms me. I love it.  In the pot put the oil onion and garlic until translucent. Then add the tomatoes w the spices. It will look like a paste because the tomatoes sweat. Mix well. It forms like a nice paste. Add the pumpkin, potatoes, plantain and carrot and coat the veggies. Add 1 1/2c of water. Bring to boil then simmer w a lid on.  Simmer till the veggies are fork

Meatless Mondays: Curry Sweet Potatoes and Squash

I made these the exact same way I did the chickpeas. Man...so good! Dinner was light. We also made popcorn. We started Breaking Bad. I know. We are so late but better late than never.  I love my footsie pjs. Pokey hates them lol

Veggie Quinoa Mash Up

We went grocery shopping today and we had to "clean the fridge" this is what we have that needs to be cooked.  Chopped up everything and sautéed for a little bit then steamed it. I haven't made quinoa in a while so I hooked it up lol.  My lunch tomorrow. I love quinoa. 

Roasted Chickpeas

This is too easy. I don't know why I haven't done this before!!! So simple. Possibilities are ENDLESS. I'm so dramatic.  Preheat the oven to 350.  I didn't measure. I threw everything in a ziploc bag. Little bit of this. Little bit of that. I wanted something crunchy and curry.  Threw it all in a bag and just mixed it up. I spread them out on a cookie sheet and put in the oven for 45 minutes.  These are amazing. So good and good for you! I think I found a new favorite. 

Sautéed Kale

I sautéed kale w baby portobellos and onions. Amazing!!!  Then...for lunch I had left overs w black beans and rice.  I'm a lucky girl lol. 

Pokey's smoothies are always the best.

Sometimes it's just better when Pokey makes it.  Tangerines, blueberries, strawberries and wheatgrass 

Cantaloupe and Wheatgrass Smoothie

I'm really starting to get the hang of this wheatgrass thing. :)  I used half this cantaloupe w a handful of wheatgrass w 1 1/2c of coconut milk. Blended it.  It was really good. It's become dinner for tonight. I'm actually full.  Cheers!!! 

Wheatgrass

I've had wheatgrass before and I'll be honest. It's so grassy! I know it's the best for you so I'm trying my best to drink it.  I figured drinking it in a blended juice would be good. I juiced 2 apples and a cucumber w two handfuls of wheatgrass.  Cheers! I'm glad Pokey liked it. Tomorrow I'm making a smoothie. ;) 

Red beans and rice

I really do have the best husband. I really do. He works full time and goes to school full time. He had time to make red beans and rice. They were amazing 

Over night oats in a jar

I'm now obsessed and I'm doing this everyday! Lol.  This is from the previous post. Yogurt was in this one.  This morning's breakfast  1c oats 1c almond milk 1/2 banana  1tbs chia seeds AMAZING!!!!! 

Over Night Oats

I've seen this all over Instagram. You literally can do what ever you like! add what ever you want. I thought I'd give it a try.  1/2c almond milk 1/2c yogurt 1/2c oats 1 tbs almond butter  A dash of cinnamon  Really excited to see how this turns out. 

Lo carb Cauliflower

So I've kinda become obsessed. This is really the easiest thing to make.  Roast a whole head of cauliflower at 350 for 20 min or until tender. I just sprayed the cauliflower w olive oil spray.  Then....Wing sauce!  Then heaven. It's so good. I promise. It's perfect for wing night lol 

Sunday Funday

Sunday funday!!! I went to church and then came home and cooked. Veggie tacos w saffron and Valentina.  We made Mexican wedding cookies. Made 3 batches. Good times.  It got late. We went to Popeyes and got chicken. I made sides. Stewed okra and bok choy.  It was a good day. 

Meatless Monday: Labor Day

Pokey went deep sea fishing and I hung out w my family. Lu helped juice for Rebecca and I. We were going riding.  Watermelon, honey dew, apples and ginger.  We did 6ish miles. We were sweaty!  We rode from the house to the park then back.  We get back to Angie's and my momma made quinoa and Angie made tempura veggies.  Rebecca and I felt guilty from eating fried food that we went back riding. This time we did over 10 miles. We did two a days. It was fun. I love riding.
