tofu scramble

I've been wanting a tofu scramble for like a week. There are many ways to make a scramble. I try to keep it simple. My cousin Moorsey is trying to make more vegan choices. I sent him this today. Pokey made him some tofu earlier and he had some left over.  I chopped a whole onion and minced garlic and sautéed it.  I crumbled the tofu w a wooden spoon. You can crumble it as big or little as you want. I try to keep it medium lol I couldn't find turmeric in the cabinet so I used chicken fajita seasoning. It's a spice mix. Sprinkle what you like.  I used a little oil to sauté the onions and garlic. The tofu will stick to the pan a little. Just use veggie broth to make  it come off the pan.  I A handful of spinach and it simmered down into this.  Spinach tortilla wrap to make a burrito. Delish. I usually use the left overs for lunch if he doesn't finish them.  With scrambles you can use any veggies you...

Smoothies

I literally drink a smoothie at least once a day. This day I made spinach, banana almond milk smoothie and the metal lid I added dates. 

Spinach and Shirataki Noodles

This has to be one of the easiest dinners. I make it for dinner and lunch the next day. I sautéed spinach w garlic and used shirataki noodles. They are so good for you. I will not eat another pasta if I'm cooking it. If I'm at a restaurant....maybe but not in the house. 

Spinach Pancakes (the lazy way)

Last night was great! We had left over spinach. I used it to make pancakes.  2c bisquick  1c coconut milk Handful of spinach 1 tsp vanilla  2 tbs sugar  Add coconut milk and spinach to a blender and blend it. It will be a pretty light color green. In a bowl add the milk and spinach with the bisquick. Mix together. Next add the vanilla and sugar.  It will look like this. I love this. You know how to make pancakes. Once you start to see bubbles around the edge you flip :)  I'm so glad they tasted good. You can't taste the spinach. Spinach has such a light taste anyway. Delish.  Strawberries and powdered sugar. Why not?! Lol.  I added agave and they gave them a nice chocolate taste. Go figure.   Enjoy!
