MIA

I've been busy. I've been a little M.I.A. Busy at work is always good and now we are in California celebrating Pokeys grandparents anniversary. Good times.  Our view on the way to the casino. Ill post pics of my food soon! 

Second day in Cali.

The food!!!! Ok. So I was nervous that I wouldn't be able to eat the way I've been accustomed to. But I can! Lol  Breakfast burrito: hash browns, spinach, bell pepper, onions, tomatoes and avocado. Delish!  Lunch: 2 plates! First fruit  Then a little veggies.  I was so full! I drank a lot of water too. By the time dinner came around I wasn't really hungry. It was one of those things like "it's 8:30 I should eat something" so I ate this...  Horrible pic but so delish. Veggie tacos w Spanish rice and black beans. I felt like I was at home. I'm such a creature of habit. Lol. I love tacos. So I was excited that they have a Mexican restaurant in the casino now.  Last night we were on the casino floor. Played a little. But all I gain was a sore throat. I hate smoke and it was so smoky. 

First day in Cali

We made it! Lol  We went to Grammas Kitchen and I was excited. They had veggie burgers. I got a veggie burger w avocado on top with onion rings!!!!! The onion rings punctured the roof of my mouth :( I think that's God's way of telling me I don't need onionrings lol.  Then for dinner...Japanese ramen w veggies. I was pleasantly surprised lol. I'm not a fan of Asian food because of soy sauce and teriyaki sauce. Clearly I killed it lol. No judging  After dinner Moorsey Breona and I worked out.  Felt good after eating so heavy.   

Meatless Monday: Tabouli

Tabouli is a Middle Eastern salad w bulgar wheat lemon parsley and mint. I bought it at Sam's Warehouse. I love simple dinners. I sliced an avocado and stuffed some tabouli in it. I had some leftover cucumbers I sliced so I thought. Why not. Lol. I love a green dinner. It's summer and hot outside. I like to eat raw. Makes me feel better. 

Who doesn't love chocolate cupcakes?

Preheat oven at 350  1 1/4 c flour  1c sugar 1/3 c unsweetened cocoa powder 1tsp baking soda 1/2tsp salt 1c warm water  1tsp vanilla extract  1/3c vegetable oil  1tsp distilled white or apple cider vinegar  Bake for 20 min or until the center is cooked all the way thru. I added powdered sugar on top just for effect :) In side the raspberries and strawberries I stuffed them w semi sweet choc chips it was so good!   Last night was dinner and a movie. We (Pokey, Phillip, Clarissa, Sully, Mark and La) ate "chicken" pot pie and for dessert I made vegan chocolate cupcakes. 

Furr's

Even at Furr's I ate good. Lol. Grilled peppers, baked sweet potato and zucchini squash. Wheat roll was the best! 

Sweet Potato w Bulgar Wheat

Bulgar wheat  is a naturally high-fiber low-fat ingredient. I use it instead of rice. I was looking in my pantry and I saw it and thought "why not" lol.  1 cup bulgar wheat 1 cup vegetable stock  1 cup water Boil like rice. That's how I cooked it. While that was cooking I sautéed sweet potato, onion and celery. Super simple. I used saffron and cumin w black pepper. That's it. It came out great!

But let's talk about my bruises though...

We've been riding. It's fun. It reminds me of my childhood. I'm getting scars and bruises! What's up w that?! Lol  This was Pokey and I yesterday. We did 10miles (yay) but...I also did this... This lovely thang was caused by my leg being pinned between my bike and a wooden peg. Don't ask :(  Where I'm pointing that's a scar that's healing from when I flipped over Sonners bike. Knee cap and right under was when Mimi clipped me w her bike and hit my front wheel and I fell on my knee. Not fun. The left scratch is from the wooden peg. Sexy right?  My ankle was from the fall off Sonner's bike and by the leaf on my foot those are ant bites. How the hell ants got in my vibrams...I have no idea.  My forearm. It's healing nicely. Lol. I secretly love my battle scars. Means I'm active. ;)  Today Rachel, Mimi and Sonner rode w me. Pokey sat out. We don't have enough bikes :( 

Meatless Monday: Mimi and Lily

Mimi came over this afternoon. We were hanging out. She loves making smoothie and juicing. (YAY!!)  Kept it simple: strawberries, grapes, kiwi, blueberries, chia seeds and spinach! She was kinda nervous about the spinach. I told she should at least have some green in every meal.  We keep it classy. How else would you drink a smoothie? We fancy.  Lily and the boys came over. We made lunch. I forgot I bought saffron the last time her and I went to HEB. I use it in my quinoa today. It was so good!  Lily cooked a sweet potato hash.  4 sweet potatoes 2 small red peppers 2 green bell peppers.  1 onion 2 celery stalks  1 corn (sliced off the cob) Old bay seasoning (how ever much you want)  Black pepper (how ever how much you want)  1/2c vegetable stalk Dice up all veggies and sauté them w oil. We used coconut oil. The last veggie to add is sweet potato. When everything turn soft and tender add the veggie stalk and lower the heat. Put a lid on it to steam the veggies. Father's Day

We split the day w my In-Laws and my people's. today was fun. We went to Gringo's. I ordered chalupas.  I told them "act like you love each other..." They both laughed lol.  Rachel says "Dad why don't you smile?" He says "I don't know how to hold a smile" lol. We took a couple of pics lol  I love all the men in my life. I'm very blessed. Happy Father's Day!!! 

Open Faced Sandwich

This has been a busy good week.  Today was a good day a work. Came home. Went grocery shipping. Rode bikes w the kiddos. Yard work w Pokey. Busy day.  Dinner I had to keep it raw and simple. I toasted some wheat bread then spread hummus all over lol. One side I used half and avocado w old bay seasoning the other side I used spinach and a tomato. This hit the spot! Idk if I was craving strawberries but these were THE best strawberries I've had in a while. The grapes were fresh too. Dinner was great. Pokey is making himself salmon. We totally made our own dinners lol. 

Just Burgers

I've been MIA for a couple if days. I'll catch you up. I've been riding.  We went riding w the Chapas Tuesday  Then yesterday we went riding w Sonner and Mimi!!!  Look at my baby all grow'd up. Don't mind the dirty counter. For her first ride she did 9 miles. Not bad.  Dinners have been boring in the since simple. Like oranges or a smoothie. Tonight we went to Just Burgers. I love this place. I can't eat there everyday because it can be really filling but it's sooooo damn good! Today I took eggplant and poblano (I'm cool w the chef like that)  They hooked me up!!!! Look at this deliciousness  It's eggplant, poblano, grilled tomato, mushrooms, avocado and onions on a pretzel bun w a side of sweet potato fries. FYI I didn't eat all the fries. Brought them home and the dogs enjoyed them.  Did I mention its delicious?!  This is Tyler. This is his first visit here. I'm so glad he enjoyed it!!! 

Meatless Monday: Eggplant Burger

Eggplant. How I love you. For what ever reason you don't love me :( I made eggplant burgers for dinner tonight. So far so good. No allergic reactions so maybe it was a fluke. :)  Cut a small eggplant and roast in the oven at 425 for 15 min. Flip 10 minutes in. Brush w olive oil on both sides. You don't want it to stick to your pan.  Chop a small onion, bell pepper and red and yellow peppers. Sauté in pan just to get the onion translucent. Add a can of beans. I used black beans. Take eggplant out the oven and put in a food processor along w the rest of the veggies. Turn oven down to 400. Now add what ever seasoning you like. I eyeballed everything. I used garlic, old bay, sea salt, black pepper, cilantro and cumin. I also added garlic hummus, walnuts, pumpkin seeds and almonds. Pulse the processor. 15 seconds tops. Put in bowl and add some bread crumbs. This helps keep the patties together.  I used 3/4c to keep the patties the same size. Line them up on a cooking sheet. Spray w

Sweet Potato Curry Hash

Simple meal for a Sunday night  3 small sweet potatoes  1 small onion  1 container of mushrooms 1 bell pepper 1tbs of red pepper flakes  1/2c veggie broth Cut everything cup. Throw in a pan. I use a nonstick pan so I don't have to use oil :) brown the onion and bell peppers first then throw in the rest of the veggies. Sauté everything with the curry power. Add the veggie broth then simmer till the sweet potato is tender. Enjoy!! 

Spinach, Garbanzo and Tomato.

Want to make the simplest thing every? Make this :)  4c spinach  2c tomato  1c garbanzo beans  1tbs garlic In a pot (that's how I do it) add a little bit of vegetable stock maybe like 1/4 cup. Add the spinach and tomatoes. Spinach will start to wilt and the tomatoes will soften now add the garbanzo beans and garlic. Ten minutes tops! That's it!!! This I my go to meal. So simple. 

Hamburger/Hotdog Day

Thursdays at wk it's hamburger hot dog day. I had a sandwich at wk and for dinner I made a mushroom patty w sautéed onion, bell peppers, sweet potato w old bay seasoning. That's it. So good. Half an avocado I added some hummus and the other half I put on my veggies. I sliced some raw sweet potato and ate it like some chips!  Sonner and I wanted to do the trails but there are severe thunderstorm warnings. So we decided to keep it in the neighborhood.  We did good for the little while we were out there. 

Side Note

Pokey Sonner and I rode 10.48 miles!!!!! Whaaaat! So proud of ourselves. That was a personal goal. I wanted to do this. We have been doing this riding thing for two weeks. Never did 10. Close though.  Sonner was screaming "yay!!!!"  Pokey looking real crazy in the background lol!!! Check out my burned calories. Yay me!  I'm really proud of all of us! 

Gnocchi and Sauce

Let me start by saying I just wanted peppers and onions and wants a taco. Pokey comes in the kitchen and wanted gnocchi. (Gross) I just can't get behind eating a ball of dough. We really debated in the store behind it. I did not want him to buy it. However I let him slide because it was whole wheat and not enriched. Anywho...  1 bell pepper 1 poblano 1 onion  1 case of mushrooms 3 small yellow an orange peppers.  When he said he wanted gnocchi I added 3 tomatoes and Italian seasoning and garlic (1tsp) When I turned around to text w my sister in law he added... Champagne and Cavendar's Greek seasoning.  He threw in a little balsamic vinegar. I didn't fight him. He knows what he wants. I was no longer getting my tacos "/ Notice the pic above w veggies in a bowl? I kept those on the side while I put the veggies in the pan in the blender then added the remainder veggies back into the pan then simmered everything together.
