Quinoa Burgers

This was my first time making these burgers. Honestly they kinda intimidated me. I've read a bunch of recipes and I kinda came up with this one. Once I made them I realized I can use any ingredients and still make this awesome. This made 12 patties.
 
I put 2 cups of quinoa w 2 cups vegetable broth and 2 cups water in the rice cooker. I had a can of chickpeas in the pantry so I rinsed those and put in a pot to boil. The spices are dried thyme, cumin, dried cilantro, and minced garlic. The flour is for later. I chopped parsley, carrots, celery and bell pepper.

Once the quinoa and chickpeas are done put 1c of quinoa and 1/2 of the chickpeas on the side. Put the rest in a food processor with the veggie mixture along with the flour (2tbs). Pulse it but not too much. You dont want mush. 

Mash the quinoa and chick peas together then add to mixture
 


Add some soy sauce. This little fish is about tablespoon.


I used a 1/2c measuring cup to keep the burgers the same size.
 
I sprayed the pan and then browned both sides.

This was my Easter dinner so good! I topped my burger with kale and avocado

Is your fridge a garden or a morgue?

Pokey and I love to grocery shop. It's what we do lol. I really love that he is cool w the fact that I'm not eating meat and don't care for it in the house. I feel it take up space and why do that when I can put veggies in its place!  First shelf: almond milk, black berries, cilantro, cherries, yogurt (his) apple sauce that my momma brought over for Angie's kids. I need to give that to her. And BEER!!! Bobby gave it to Pokey  Second shelf: Salad stuff. Spinach, spring mix, feta cheese, avocado and tomatoes  Third shelf: Green grapes, mushrooms and corn. HEB 5 for $1  Fourth shelf: Eggplant (Pokey's) red grapes, watermelon and cauliflower. Pickled jalapeƱo. Pokeys choice. Not mine "/   Vegetable drawer: Bell pepper, tomato, broccoli, cucumbers, poblano pepper and small red orange and yellow peppers  Counter: FRUIT!!! Bananas, pineapples, apples, pear, lemon and limes.  I LOVE COLOR!!!! 

21 Day Sugar Detox

Monday after Super Bowl some friends and I started this detox. I was nervous, excited, anxious and scared. I didn't know what to expect. It went well.  I are a lot like this. No sugar meant no bread or processed foods. I lost 9lbs. It felt good. It did change my way of thinking about sweets. I don't crave them. I guess that was the point lol.  I'm glad it's over but I've been following the diet for the most part.
