Acorn squash stuffed w quinoa

Acorn squash is great. You can stuff it w anything and it will taste good. Cut the acorn in half and scoop the seeds out. Put some butter and brown sugar on the flesh of acorn. Face down on a baking sheet and bake at 350 for 30 min. While that's going get together what ever ingredients you want your stuffing to be. I used quinoa, onion, celery & mushrooms. Sauté the veggies then add quinoa w cranberries and walnuts. Fill acorns then bake for an additional 30 min. Salt and pepper to taste. It's really good. You can fill it with whatever you like. I'm just really loving quinoa right now.

Is your fridge a garden or a morgue?

Pokey and I love to grocery shop. It's what we do lol. I really love that he is cool w the fact that I'm not eating meat and don't care for it in the house. I feel it take up space and why do that when I can put veggies in its place!  First shelf: almond milk, black berries, cilantro, cherries, yogurt (his) apple sauce that my momma brought over for Angie's kids. I need to give that to her. And BEER!!! Bobby gave it to Pokey  Second shelf: Salad stuff. Spinach, spring mix, feta cheese, avocado and tomatoes  Third shelf: Green grapes, mushrooms and corn. HEB 5 for $1  Fourth shelf: Eggplant (Pokey's) red grapes, watermelon and cauliflower. Pickled jalapeño. Pokeys choice. Not mine "/   Vegetable drawer: Bell pepper, tomato, broccoli, cucumbers, poblano pepper and small red orange and yellow peppers  Counter: FRUIT!!! Bananas, pineapples, apples, pear, lemon and limes.  I LOVE COLOR!!!! 

Side Note

Pokey Sonner and I rode 10.48 miles!!!!! Whaaaat! So proud of ourselves. That was a personal goal. I wanted to do this. We have been doing this riding thing for two weeks. Never did 10. Close though.  Sonner was screaming "yay!!!!"  Pokey looking real crazy in the background lol!!! Check out my burned calories. Yay me!  I'm really proud of all of us!
