Meatless Monday: Eggplant Burger

Eggplant. How I love you. For what ever reason you don't love me :( I made eggplant burgers for dinner tonight. So far so good. No allergic reactions so maybe it was a fluke. :)
Cut a small eggplant and roast in the oven at 425 for 15 min. Flip 10 minutes in. Brush w olive oil on both sides. You don't want it to stick to your pan.
Chop a small onion, bell pepper and red and yellow peppers. Sauté in pan just to get the onion translucent. Add a can of beans. I used black beans.
Take eggplant out the oven and put in a food processor along w the rest of the veggies. Turn oven down to 400. Now add what ever seasoning you like. I eyeballed everything. I used garlic, old bay, sea salt, black pepper, cilantro and cumin. I also added garlic hummus, walnuts, pumpkin seeds and almonds. Pulse the processor. 15 seconds tops. Put in bowl and add some bread crumbs. This helps keep the patties together.
I used 3/4c to keep the patties the same size. Line them up on a cooking sheet. Spray w cooking spray first so they don't stick. Bake for 45 min. Flip half way thru cooking time.
This was LaLa's burger. I hooked her up!
This was mine. I ate bread already today. So I opted for none :) I just boiled the asparagus. It's naked. Nothing is on it. Dinner was great!

Jackfruit "beef" Stew

SATURDAY WITH MY PARENTS! Pokey went fishing and I went grocery shopping. I love to hang out with my family. I love them with my entire heart. I called my mom and asked her if she wanted to join me while I picked up a few things from the store. Of course, she said yes. When I get to my parents she says my dad wants tacos from Cristobal. I'm down because they really have great tacos. I got beans and nopales (cactus) Look how cute my parents are. 43 years in February.  I love that they show love to each other.  We ended up going to HEB and I didn't grab much but I got some acorn squash and some okra.  It was a cold Saturday and I know him being on the water plus the wind I know he would appreciate a warm meal when he came home. My mom in law bought us a Ninja Foodi and I have been intimidated by it for almost a year. This is probably the 4th time I have used it. I had one of those meal cheaters, it was beef stew one where you add meat and some veggies.  I added ...

It's May!

I was texting w La and we were talking food and what not. Anyways. It dawned on my that its May. I'm going into my fifth month of being like 90% vegan. It's funny because its not like that 10% is milk and cheese. It's Chic Fil A! Lol. Their sunflower bagel chicken breakfast biscuit is crack! At work we had a luncheon and they make the best steak. I had a couple of bites and I gave it to Patty. I didn't have a taste for it..what...crazy in know. Another time we had family over and I bought barbacoa and carnitas. I was so sad face. The barbacoa was not delish to me any more. Carnitas were great but I could do w out. I just was always a fan of pork. But I haven't had bacon yet. Go figure. We started this journey w juicing. And then after I thought "no meat/dairy" till the end of March. I wanted to get blood work done to see if it was worth it. It was. I lowered my cholesterol by 13 points! I think that's great. Plus...I feel great. I'm very ...

21 Day Sugar Detox

Monday after Super Bowl some friends and I started this detox. I was nervous, excited, anxious and scared. I didn't know what to expect. It went well.  I are a lot like this. No sugar meant no bread or processed foods. I lost 9lbs. It felt good. It did change my way of thinking about sweets. I don't crave them. I guess that was the point lol.  I'm glad it's over but I've been following the diet for the most part.
