Meatless Monday: Eggplant Burger

Eggplant. How I love you. For what ever reason you don't love me :( I made eggplant burgers for dinner tonight. So far so good. No allergic reactions so maybe it was a fluke. :) 
Cut a small eggplant and roast in the oven at 425 for 15 min. Flip 10 minutes in. Brush w olive oil on both sides. You don't want it to stick to your pan. 
Chop a small onion, bell pepper and red and yellow peppers. Sauté in pan just to get the onion translucent. Add a can of beans. I used black beans.
Take eggplant out the oven and put in a food processor along w the rest of the veggies. Turn oven down to 400. Now add what ever seasoning you like. I eyeballed everything. I used garlic, old bay, sea salt, black pepper, cilantro and cumin. I also added garlic hummus, walnuts, pumpkin seeds and almonds. Pulse the processor. 15 seconds tops. Put in bowl and add some bread crumbs. This helps keep the patties together. 
I used 3/4c to keep the patties the same size. Line them up on a cooking sheet. Spray w cooking spray first so they don't stick. Bake for 45 min. Flip half way thru cooking time.

This was mine. I ate bread already today. So I opted for none :) I just boiled the asparagus. It's naked. Nothing is on it. Dinner was great!

  SATURDAY WITH MY PARENTS! Pokey went fishing and I went grocery shopping. I love to hang out with my family. I love them with my entire heart. Movie Night:Hungry for Change

Last night we watched Hungry for Change. I love docs. I love docs about food! For me it helps me keep on track with what I'm doing as far as food. Sometimes I think I miss meat but I really don't. I try my hardest not to have processed food in our house. I'm glad Pokey (Husband) is on board. He will eat what ever I make. Last night I wanted Italian. I made some "pasta" I used yam noodles. So good. So lo in carbs it's great. I used bell pepper, mushrooms, onions, garlic and Italian spices. For our personal pizzas I used whole wheat high fiber lo carb tortillas. I love thin crust pizza so for my it was a no brainer. I loaded them w the same veggies I used for my sauce. I used "meatless" pepperoni and dairy free cheese. They were delish!!!

Gnocchi and Sauce

Let me start by saying I just wanted peppers and onions and wants a taco. Pokey comes in the kitchen and wanted gnocchi. (Gross) I just can't get behind eating a ball of dough. We really debated in the store behind it. I did not want him to buy it. However I let him slide because it was whole wheat and not enriched. Anywho...  1 bell pepper 1 poblano 1 onion  1 case of mushrooms 3 small yellow an orange peppers.  When he said he wanted gnocchi I added 3 tomatoes and Italian seasoning and garlic (1tsp) When I turned around to text w my sister in law he added... Champagne and Cavendar's Greek seasoning.  He threw in a little balsamic vinegar. I didn't fight him. He knows what he wants.
