Meatless Monday: Eggplant Burger

Eggplant. How I love you. For what ever reason you don't love me :( I made eggplant burgers for dinner tonight. So far so good. No allergic reactions so maybe it was a fluke. :) 
Cut a small eggplant and roast in the oven at 425 for 15 min. Flip 10 minutes in. Brush w olive oil on both sides. You don't want it to stick to your pan. 
Chop a small onion, bell pepper and red and yellow peppers. Sauté in pan just to get the onion translucent. Add a can of beans. I used black beans.
Take eggplant out the oven and put in a food processor along w the rest of the veggies. Turn oven down to 400. Now add what ever seasoning you like. I eyeballed everything. I used garlic, old bay, sea salt, black pepper, cilantro and cumin. I also added garlic hummus, walnuts, pumpkin seeds and almonds. Pulse the processor. 15 seconds tops. Put in bowl and add some bread crumbs. This helps keep the patties together. 
I used 3/4c to keep the patties the same size. Line them up on a cooking sheet. Spray w cooking spray first so they don't stick. Bake for 45 min. Flip half way thru cooking time.

This was mine. I ate bread already today. So I opted for none :) I just boiled the asparagus. It's naked. Nothing is on it. Dinner was great!

Avocado.

If I cut an avocado will you eat the other half? Pokey What are you...brand new? Me I'm in LOVE w avocado. For dinner I had left over veggies from Monday I stuffed them in my avocado w red pepper hummus. Dinner was great.  We need to go grocery shopping. We only had 3 slices of bread. I asked Pokey if I could use all 3. He was like sure go ahead. So I did!!!  Yup. That's a club lol. Hummus, tomato, avocado,spinach, bread then I repeated it all over again.  Isn't that beautiful!  I love it.  I didn't plan on eating sweet potato tots. It just happened lol. Lunch was amazing. 

Juicing

I'm craving juice. My body is seriously craving juice. Particularly cucumbers. I feel like I need to be watered. Does that make any sense? We started our journey with juicing. So why not continue. We have been eating vegan (me) and Pokey the majority of the time. For lunch I'd pack us a light lunch but my body wants to be watered. Last week at work we had 4 groups in 4 days. Talk about being tired. I ate bad bad and worse than I have in a LONG time. I ate Chic-fil-A. Chic-fil-A isn't bad just not good for me. My stomach can't handle the grease and meat. (That's what she said) Pokey says its ok because it's "Jesus" chicken. Lol that always makes me laugh. But it really messed up my stomach. I ate fast food for 4 days straight! Not cool. Now you know why I'm craving juice. First juice has cucumbers,lime, apples and a pear. The second juice has cucumbers, apples, lime and watermelon. I'm so excited for lunch tomorrow.

2021

WHERE HAVE YOU BEEN?  It's been a while. I just went back and looked...2017. Long time. I've been thinking about this a lot for the past few days. I feel I gave up on posting because I didn't want to hold myself accountable for my eating habits. I slipped. I haven't been vegan mostly in a LONG time. I went plant-based because it was healthier for me. For me, I thought it was important to document and hold myself accountable. I believe that is why I stopped posting, I wanted to be relaxed and not think about what I was eating.  Well, it's 2021 and I'm 42 years old. I'm not getting any younger. Covid happened and I'm thankful I survived and wasn't sick how some people became. My intention for this year is to be mindful of myself and my body. I only have one body and I need to take care of it.  Current picture of Pokey and I.  Y'all, I love this man so much. We have been through it! I'm glad to have him by my side.
