Meatless Monday: Mimi and Lily

Mimi came over this afternoon. We were hanging out. She loves making smoothie and juicing. (YAY!!) 
Kept it simple: strawberries, grapes, kiwi, blueberries, chia seeds and spinach! She was kinda nervous about the spinach. I told she should at least have some green in every meal. 
We keep it classy. How else would you drink a smoothie? We fancy. 

Lily and the boys came over. We made lunch. I forgot I bought saffron the last time her and I went to HEB. I use it in my quinoa today. It was so good!  Lily cooked a sweet potato hash. 

4 sweet potatoes
2 small red peppers
2 green bell peppers. 
1 onion
2 celery stalks 
1 corn (sliced off the cob)
Old bay seasoning (how ever much you want) 
Black pepper (how ever how much you want) 
1/2c vegetable stalk

Dice up all veggies and sauté them w oil. We used coconut oil. The last veggie to add is sweet potato. When everything turn soft and tender add the veggie stalk and lower the heat. Put a lid on it to steam the veggies. It will take probably like 8-10 minutes. Keep an eye on your food. Lol. It will be delish!

Is your fridge a garden or a morgue?

Pokey and I love to grocery shop. It's what we do lol. I really love that he is cool w the fact that I'm not eating meat and don't care for it in the house. I feel it take up space and why do that when I can put veggies in its place!  First shelf: almond milk, black berries, cilantro, cherries, yogurt (his) apple sauce that my momma brought over for Angie's kids. I need to give that to her. And BEER!!! Bobby gave it to Pokey  Second shelf: Salad stuff. Spinach, spring mix, feta cheese, avocado and tomatoes  Third shelf: Green grapes, mushrooms and corn. HEB 5 for $1  Fourth shelf: Eggplant (Pokey's) red grapes, watermelon and cauliflower. Pickled jalapeño. Pokeys choice. Not mine "/   Vegetable drawer: Bell pepper, tomato, broccoli, cucumbers, poblano pepper and small red orange and yellow peppers  Counter: FRUIT!!! Bananas, pineapples, apples, pear, lemon and limes.  I LOVE COLOR!!!! 

21 Day Sugar Detox

Monday after Super Bowl some friends and I started this detox. I was nervous, excited, anxious and scared. I didn't know what to expect. It went well.  I are a lot like this. No sugar meant no bread or processed foods. I lost 9lbs. It felt good. It did change my way of thinking about sweets. I don't crave them. I guess that was the point lol.  I'm glad it's over but I've been following the diet for the most part.
