Smoovie and Juicing

Penn and Lu came over for a little while today. Our house equals juicing. Penn likes smoothies and Lu likes juice. In Penn's smoothie I used frozen strawberries and almond milk. That's it. Nice and simple. Lukas was very specific. He wanted an apple, a lemon and a slice of watermelon. I'm just happy they love fruit. Cheers!!!

Anniversary Dinner (7yrs)

Today makes 7years married. I love Pokey. We were going to watch a movie and go out to eat. He has an assignment due for school so I told him we could stay in and chill. He's literally chilling. He's asleep as I type this. My poor baby. He's tired. Long weekend combined w a job your not 100% about can be exhausting. He hasn't started his homework yet. My baby. Dinner was good. I made oven fired tofu w oven roasted garlic asparagus. Quinoa w bell pepper and onion. I asked Lily what I should make for dinner and she suggest avocado. She saw this avocado stuffed w shrimp so I stuffed mine w tomato and onion. Pokey's favorite cake is white on white w coconut so I made him cupcakes. Today I put coconut pudding in the middle. We enjoyed dinner. Now time for me to wake him up!!

Tacos de cebolla, poblano y tomate

Sunday ended with me making tacos for my Momma and Rebeca. Pokey wasn't hungry. He ate a lot at Ifest. We need to go grocery shopping. I literally have 2 onions, celery and two tomatoes after dinner. That's it! I put together some tacos. I pulled the comal out and cooked everything on it. I had left over posole so I drained the juice and put it on the comal too! Everything is good. Avocado on top w lemon and cilantro of course.

Ifest: Brazil

Today we went to Ifest and they highlighted Brazil. We hung out w my sisters and Rusty. Rusty is actually moving to Brazil this summer to start teaching. Lucky man. I ate a wrap w barbecue tofu and a veggie Jamaican patty. Pokey had catfish and boudin. We all shared truffle waffle fried and mac and cheese balls! It was good day we danced to music and kicked it.

Spinach and Chickpeas

It's Friday night and my Momma and Rebecca are here w me. Pokey is doing homework and we are watching The Sea Inside. So far good movie check it out on Netflix. Rebecca wanted healing food. She hurt her leg and is staying away from processed heavy food. She literally came to the right place. I sautéed spinach w garlic, tomato and chickpeas. Hooked it up! I also made sweetpotato hash but added curry and cumin to make it Caribbean style. Both very good. Friday nights w family. Doesn't get better than this.

Roasted Cauliflower & Eggplant

Went to eat at The Olive Oil for lunch today. It's really good I decided to make some cauliflower greek style. I added cauliflower, olive oil and Greek seasoning. Roasted at 350 for 20 minutes. I threw in an eggplant too. Added some low fat feta on top of the eggplant. Tasted good. Today Roxy ordered fried eggplant and I had some. My upper lip started to tingle and get hot and flare up. We charged it to bad eggplant. I came home made some and ate it last and my lip started all over again. I don't want to have an allergic reaction to eggplant! It's my favorite!!!! We will see. I'm gonna chill on eating it for a while. Hopefully it's a fluke accident and I'm just tripping.

Juicing

I'm craving juice. My body is seriously craving juice. Particularly cucumbers. I feel like I need to be watered. Does that make any sense? We started our journey with juicing. So why not continue. We have been eating vegan (me) and Pokey the majority of the time. For lunch I'd pack us a light lunch but my body wants to be watered. Last week at work we had 4 groups in 4 days. Talk about being tired. I ate bad bad and worse than I have in a LONG time. I ate Chic-fil-A. Chic-fil-A isn't bad just not good for me. My stomach can't handle the grease and meat. (That's what she said) Pokey says its ok because it's "Jesus" chicken. Lol that always makes me laugh. But it really messed up my stomach. I ate fast food for 4 days straight! Not cool. Now you know why I'm craving juice. First juice has cucumbers,lime, apples and a pear. The second juice has cucumbers, apples, lime and watermelon. I'm so excited for lunch tomorrow.

Cleaning Fruit

Don't laugh but...I usually scrub my fruit and veggies till I feel like they are clean. On Facebook a pic was circulating about filling your sink w water and adding 1c of vinegar. I decided to try it. We went grocery shopping and I soak my fruit. The sink wasn't filled w dirt but my fruit felt clean. No wax. Awesome. I soaked for a little over 10 minutes. Try it. You'll like it.

Sweet Potato Burrito

I really enjoy left overs. Some people dot care for them but I like to mix it up. Tonight I made a burrito out of my hash from last night. I added meatless pepperoni and avocado to it. Dinner was great.

Sweet Potato Hash

I wanted a quick lunch for work tomorrow. I had some left over posole and I wanted to add to my meal. I chopped up my onion, sweet potato and jalapeño. I sautéed it with a little bit of garlic. Added black pepper and cumin along w tomato bullion. After it browned it a little I added vegetable broth to steam to soften the potatoes. Excited for lunch now. It taste so good :)

Cucumber Sandwich

Refreshing. So light and filling. Pokey made guacamole and I added it w hummus and cucumbers. Delish

Monday with my Momma.

This is the first Monday I've had off in a while. I spent it w my Momma and cousin Lily. Lily helped me do yard work. My parents yard looks good w some flowers in it :) Lunch was simple but so good. She had some oatmeal bread it was amazing. I added guac w kale, tomato and cucumbers. So refreshing. I love crunch so I had some jicama on the side. When Rachel and Rebecca got to our parents house I made them a sandwich too. I'm hungry now. Just thinking about that oatmeal bread.

Angel food cake w Strawberries.

Ayleen wanted to help. They brought over angel food cake. I had her chop some fresh strawberries and make a compote! She enjoyed her self. We made them fancy and put in wine glasses. She was so proud.

Quinoa stuffed bell pepper

I'm starting to use quinoa a lot. I'm ok with that ;) You can add whatever you like to stuff your bell peppers. I chose carrots, onions, meatless crumbles and quinoa. I baked the stuffed bell peppers at 350 for 30-45 min. I used vegetable broth and water to fill up the baking dish. Enough liquid to go up half way of the bell pepper so the pepper can cook and not dry out. I added cheese to all but mine. :)

Thursday night dinner.

Soooooooo busy at work. Busy is good. I keep telling myself "/ We invited our friend Claudia and her family for dinner. I'm excited they are interested in meat free meals! We made stuffed bell pepper w quinoa and meatless crumbles. I made posole. Meatless of course. Pizza and tofu noodles w mushrooms! Yummy. Ayleen made dessert. Strawberries w angel food cake. Dinner was great!

Quinoa w Asparagus

"Question. What is quinoa?" LaLa Only the best thing ever! I asked if her and Mark had plans and I invited them for dinner. I made the quinoa like I would rice. While that was cooking I chopped and sautéed my shallot w asparagus and thyme (1tsp) Added a little water to let the asparagus steam. Once the quinoa was ready I added everything together. I squeezed lemon and tossed in some feta. Now...what I would do different... I would have cooked the quinoa in vegetable broth instead of water. Pokey said it tasted bland. Which I guess it did but to me the flavors were light and fresh. It was good. I try to not cook w a lot of salt so I didn't use salt so I told them if they liked salt they could add it. I roasted eggplant (typical) and had the left over meatless crumbles and mashed black beans. Dinner was great w great friends.

Meatless Crumbles

I'm kinda having mixed feelings right now about meatless crumbles. I was reading up on GMO and some products I buy may have them. I need to look more into it to see if this has it. Pokey wanted a burrito for lunch tomorrow. I hooked him up! I use the crumbles like ground meat. I added bell pepper, jalapeño, onion, tomato and cilantro. So good. The black beans I made yesterday were mashed and I put in his burrito w some spanish rice I made in the rice cooker. I love to cook. Can you tell? I had some for dinner in a bowl. Just meat and rice. No beans. Tomorrow I packed my lunch w beans. So excited!!!

Black Beans

I'm a beaner for life! I love beans. I sautéed onions, tomato, garlic, bell pepper and poblano. Kept it simple. Rinsed and washed the beans and let simmer for ever. Really like a couple of hours lol. We enjoyed it.

Soyrizo and Egg

Early dinner today. I read this article today about GMO's and how it's in a lot of the food we eat. We do good about not eating processed foods so when I read some meatless products may have GMO I was nervous/scared because I have some stuff in my freezer and fridge that are meatless. I'm so glad my soyrizo has no GMO. Yay me! I made us burritos. Soyrizo,egg, salsa, crema & avocado.

Family weekend

This weekend was great. My cousin married a friend from high school. Who would have thought we would become family. It's great. Sunday dinner is usually spent w family. Rachel, Rebecca, Bernard and I cooked and danced to Selena on pandora. Can you say jammin!?! Lol. Betty and Amir joined us for dinner. It was great ate a little. Drank a little. You know the usual.

Napales

I love cactus. It's really good. Kinda has a tart taste to it. We walked into heb and the lady was cleaning them. I brought some home. Couldn't resist!!! Napales, onion, tomato, jalapeño and garlic. How easy. I used olive oil to sauté the veggies then served. Super easy.
