brussel sprouts, walnuts and quinoa in a lemon vinaigrette

We haven't gone grocery shopping this week because we partied all weekend. Lol. So now I'm looking in the freezer and we have three bags of brussel sprouts. I roasted the brussels and walnuts in the oven.
Brussels at 400 for 20 min and the walnuts at 375 for 5. The quinoa I made it simple. 2c water 1c uncooked quinoa. You cook it like rice. I zested the lemon and juiced the whole lemon and whisked it into 1/4c of olive oil. I also tossed in red pepper flakes.
It taste really good. Lunch for tomorrow too.
