Weekend Eats

Saturday was my first day to come he from work and not go to school. Pokey and I celebrated w a movie and dinner at Brickhouse Tavern. Mushroom pizza w goat cheese and arugula. He shared some pizza w me and he got himself a crab cake sandwich. He said it was good. 
Today it was Kristen's baby shower. It was fun!  It was sports themed. It was cute. 
Me, Sully, Ashley, Kristen, Roxy and Jaque. We all work together. It was cool hanging outside of work. 

I came home and took a "nap" lol. I slept from 5-8:30! Lol. Wrong decision lol. I hope I can sleep tonight. 
I roasted zucchini w bell pepper and poblano peppers. I love eating green. 

Now it's time for Dexter.

Avocado.

If I cut an avocado will you eat the other half? Pokey What are you...brand new? Me I'm in LOVE w avocado. For dinner I had left over veggies from Monday I stuffed them in my avocado w red pepper hummus. Dinner was great.  We need to go grocery shopping. We only had 3 slices of bread. I asked Pokey if I could use all 3. He was like sure go ahead. So I did!!!  Yup. That's a club lol. Hummus, tomato, avocado,spinach, bread then I repeated it all over again.  Isn't that beautiful!  I love it.  I didn't plan on eating sweet potato tots. It just happened lol. Lunch was amazing.

Juicing

I'm craving juice. My body is seriously craving juice. Particularly cucumbers. I feel like I need to be watered. Does that make any sense? We started our journey with juicing. So why not continue. We have been eating vegan (me) and Pokey the majority of the time. For lunch I'd pack us a light lunch but my body wants to be watered. Last week at work we had 4 groups in 4 days. Talk about being tired. I ate bad bad and worse than I have in a LONG time. I ate Chic-fil-A. Chic-fil-A isn't bad just not good for me. My stomach can't handle the grease and meat. (That's what she said) Pokey says its ok because it's "Jesus" chicken. Lol that always makes me laugh. But it really messed up my stomach. I ate fast food for 4 days straight! Not cool. Now you know why I'm craving juice. First juice has cucumbers,lime, apples and a pear. The second juice has cucumbers, apples, lime and watermelon. I'm so excited for lunch tomorrow.

WHERE HAVE YOU BEEN?  It's been a while. I just went back and looked...2017. Long time. I've been thinking about this a lot for the past few days. I feel I gave up on posting because I didn't want to hold myself accountable for my eating habits. I slipped. I haven't been vegan mostly in a LONG time. I went plant-based because it was healthier for me. For me, I thought it was important to document and hold myself accountable. I believe that is why I stopped posting, I wanted to be relaxed and not think about what I was eating.  Well, it's 2021 and I'm 42 years old. I'm not getting any younger. Covid happened and I'm thankful I survived and wasn't sick how some people became. My intention for this year is to be mindful of myself and my body. I only have one body and I need to take care of it.  Current picture of Pokey and I.  Y'all, I love this man so much. We have been through it! I'm glad to have him by my side. I love him the moon and back,
