30 Day Vegan Challenge: Day 19

It's Becca's bday! We went to Rachel's house and did lunch/dinner we snacked on hummus veggies and chips. 
Then ate tacos. Omg so good! In mine I put rice beans mushrooms pico de gallo. So full! 
Aaron put our heads together and said "cheeeeese" he's so funny. 
Becca and Bernard played for us. Good day w family.

Avocado.

If I cut an avocado will you eat the other half? Pokey What are you...brand new? Me I'm in LOVE w avocado. For dinner I had left over veggies from Monday I stuffed them in my avocado w red pepper hummus. Dinner was great.  We need to go grocery shopping. We only had 3 slices of bread. I asked Pokey if I could use all 3. He was like sure go ahead. So I did!!!  Yup. That's a club lol. Hummus, tomato, avocado,spinach, bread then I repeated it all over again.  Isn't that beautiful!  I love it.  I didn't plan on eating sweet potato tots. It just happened lol. Lunch was amazing. 

Juicing

I'm craving juice. My body is seriously craving juice. Particularly cucumbers. I feel like I need to be watered. Does that make any sense? We started our journey with juicing. So why not continue. We have been eating vegan (me) and Pokey the majority of the time. For lunch I'd pack us a light lunch but my body wants to be watered. Last week at work we had 4 groups in 4 days. Talk about being tired. I ate bad bad and worse than I have in a LONG time. I ate Chic-fil-A. Chic-fil-A isn't bad just not good for me. My stomach can't handle the grease and meat. (That's what she said) Pokey says its ok because it's "Jesus" chicken. Lol that always makes me laugh. But it really messed up my stomach. I ate fast food for 4 days straight! Not cool. Now you know why I'm craving juice. First juice has cucumbers,lime, apples and a pear. The second juice has cucumbers, apples, lime and watermelon. I'm so excited for lunch tomorrow.

Movie Night:Hungry for Change

Last night we watched Hungry for Change. I love docs. I love docs about food! For me it helps me keep on track with what I'm doing as far as food. Sometimes I think I miss meat but I really don't. I try my hardest not to have processed food in our house. I'm glad Pokey (Husband) is on board. He will eat what ever I make. Last night I wanted Italian. I made some "pasta" I used yam noodles. So good. So lo in carbs it's great. I used bell pepper, mushrooms, onions, garlic and Italian spices. For our personal pizzas I used whole wheat high fiber lo carb tortillas. I love thin crust pizza so for my it was a no brainer. I loaded them w the same veggies I used for my sauce. I used "meatless" pepperoni and dairy free cheese. They were delish!!!
