Focused

So today I decided I want to do the marathon for next year. Half marathon.  Today I ran w my brother. It was fun. Usually on a treadmill I do a mile in 20 min. Today I did my first mile at 16 min and second mile at 18 min. I will get stronger. Then he had me jumping on stuff lol.  We go to our Momma's house and they grilled.  So good. It's better when you don't have to cook it yourself lol. After lunch. Phillip and Angie walked a mile in the neighborhood  Dinner tonight was kale, baby portobellos and bell pepper with tofu noodles. So good.  Today was a good day! 

Houston Chevron Marathon

Can I tell you how inspired I am by my friends. I love them. Cindy and Karla ran 26 miles!!! Melissa did the half marathon. 13 miles. So amazing!  They are like my second set of sisters.  Their parents are so proud.  This is a screen shot from the video I took. Bryan helped push Cindy. She never gave up. Her boys ran the end w her. Cindy had a baby 6 months ago!  This is Karla. So focused. So proud of them. Melissa finished before we got there. I don't have a pic of her.  Have I mentioned how proud I am? 

Tofu noodles

I love the ninja w the food processor part. I chopped mushrooms, bellpepper and squash.  Looks kinda like slaw.  I put in the pan w coconut oil and sautéed it.  Ok. These tofu noodles are everything!  No cholesterol, gluten free and vegan. Win win in my book.  The noodles you rinse and then cook in boiling water for 3 minutes. After that put noodles in the pan w veggies.  Dinner is served!  

His and Hers Smoothies

I've really become a fan of the ninja lol.  Kale, blackberries, blueberries and mango.  His and hers lol.  I'm a fan of smoothies and juicing. 

Girls night!!

Friday night we were supposeded to do T25. It didn't happen. But we had a girls night and we went to the gym lol. I love sweating only while working out lol.    After dinner we went to Brick House Tavern. A grown up grilled cheese with tomato soup. It was good. Of night with friends. 

Kale and orange smoothie

This is good. I made it for lunch tomorrow.  The left overs I drank.  Handful of spinach  Two oranges 1c of almond milk  Blend and enjoy 

Spaghetti and meatballs

Tonight Pokey started dinner. He beat me home. We had meatless meatballs in the freezer. I'm thinking they are soy. It's wrong I don't remember? Lol. Anyways. He made a whole wheat pasta to go with it.  I'm not a fan of tomato sauce. I think it's boring. I added squash, carrots and some spinach. I sautéed the veggies first before adding it into the sauce.  Look how amazing that looks. (Drool) I wanted to eat it by itself but I already told him I was gonna add it to the sauce.  Dinner was great tonight. 

What happens when you skip a day?

You do two sets in one night.  First was total body circuit. I sweated and messed my eyeliner up lol  Second work out was abs. Omg that kicked my ass but I made it my bitch! Lol  Work outs are done! I feel alive!!! Now time to clean the kitchen :( 

Ninja blender

This excites me so much. Our blender that we had since we got married (wedding present 7yrs ago) finally broke. So we got a ninja.  Yay! So our first smoothie is kale, apple, banana and almond milk w vanilla. So good.  Ta da!!!  I love green smoothies. I need them in my life! Lol 

Post Work out Smoothie

Second day Focus T25. It was good. I feel good. Pokey makes our shakes.  Vegan protein powder + almond milk + berries = heaven  I'm sweaty lol  Cheers 

Cauliflower and lentil patties (leftovers)

I knew while I was eating last night that I wanted to make these into patties for burgers. We don't own bread lol. So a patty w sautéed kale and onion w garlic will do. Lol  I had about two cups of cauliflower mixture left over. I added 1/2c of breadcrumbs. You can eyeball it though if you like. Add different seasonings if you like too. Something that would compliment what you already got going on w the cauliflower. I used a 1/2c to scoop out the mixture. I wanted to keep them the same size.  I put in the oven at 350 for 20 min. Half way thru flip.  While those were baking I sautéed onion garlic and kale.  I also ate the spoonful of what was left :)  This is good. Make it. You'll love it. This would be amazing on bread too. Toasted bread. We just don't have any. 

Focus T25

We started an exercise program. I feel like we eat right. If we exercise with it we can lose a good amount of weight. Cheers to the new year!  Enjoy my sweat. :)

Cauliflower and lentil tacos

Meatless Monday!!! I was watching a show on Cooking Channel 'How to live to 100' and they made cauliflower tacos. I put my own spin on it ofcourse.  Add cauliflower to the food processor and break it down until it's kinda like mashed potatoes  I ended up having to take some of the cauliflower out. I cut an onion up and put it in the pan to brown. I didn't use any oil at all in the recipe. I have an awesome pan lol.  I added the cauliflower and burrito seasoning to the onions.  On the show they used a can of tomatoes but I blended my own.  I mixed everything together to let the water cook out.  I boiled lentils and added it to the cauliflower.  Mixed it all together and cooked the water out some more.  I love corn tortillas. I used them. Cut up some cilantro and limes and put some Valentina on everything. They are so good! 

Overnight oats + Pomegranate + Hazelnuts

This was really good and simple. The hazelnuts added a nice crunch. I'll be doing this again. 

Spinach Pancakes (the lazy way)

Last night was great! We had left over spinach. I used it to make pancakes.  2c bisquick  1c coconut milk Handful of spinach 1 tsp vanilla  2 tbs sugar  Add coconut milk and spinach to a blender and blend it. It will be a pretty light color green. In a bowl add the milk and spinach with the bisquick. Mix together. Next add the vanilla and sugar.  It will look like this. I love this. You know how to make pancakes. Once you start to see bubbles around the edge you flip :)  I'm so glad they tasted good. You can't taste the spinach. Spinach has such a light taste anyway. Delish.  Strawberries and powdered sugar. Why not?! Lol.  I added agave and they gave them a nice chocolate taste. Go figure.   Enjoy!
