30 Day Vegan Challenge: Day 27

Today was a much better day than yesterday. Pokey still worked on the truck but just my truck. He changed the brakes (yay!)

This isn't food. This is lemon honey and olive oil for Becca's hair. We lightened it today. Lu like to squeeze lemons

Later for dinner I ate some more. I've never had grilled sweet potato but its good!

Rebecca and I went bike riding. I think we did good for the first time.

We came home and Pokey was done w my brakes and started to do yard work so I joined him. Anyone want some lemon basil and pineapple sage? I cut some and have it to share.

Pokey made him dinner. He made tilapia I had to share. It smells good.

Jackfruit "beef" Stew

SATURDAY WITH MY PARENTS! Pokey went fishing and I went grocery shopping. I love to hang out with my family. I love them with my entire heart. I called my mom and asked her if she wanted to join me while I picked up a few things from the store. Of course, she said yes. When I get to my parents she says my dad wants tacos from Cristobal. I'm down because they really have great tacos. I got beans and nopales (cactus) Look how cute my parents are. 43 years in February. I love that they show love to each other. We ended up going to HEB and I didn't grab much but I got some acorn squash and some okra. It was a cold Saturday and I know him being on the water plus the wind I know he would appreciate a warm meal when he came home. My mom in law bought us a Ninja Foodi and I have been intimidated by it for almost a year. This is probably the 4th time I have used it. Movie Night:Hungry for Change

Last night we watched Hungry for Change. I love docs. I love docs about food! For me it helps me keep on track with what I'm doing as far as food. Sometimes I think I miss meat but I really don't. I try my hardest not to have processed food in our house. I'm glad Pokey (Husband) is on board. He will eat what ever I make. Last night I wanted Italian. I made some "pasta" I used yam noodles. So good. So lo in carbs it's great. I used bell pepper, mushrooms, onions, garlic and Italian spices. For our personal pizzas I used whole wheat high fiber lo carb tortillas. I love thin crust pizza so for my it was a no brainer. I loaded them w the same veggies I used for my sauce. I used "meatless" pepperoni and dairy free cheese. They were delish!!!

Gnocchi and Sauce

Let me start by saying I just wanted peppers and onions and wants a taco. Pokey comes in the kitchen and wanted gnocchi. (Gross) I just can't get behind eating a ball of dough. We really debated in the store behind it. I did not want him to buy it. However I let him slide because it was whole wheat and not enriched. Anywho... 1 bell pepper 1 poblano 1 onion 1 case of mushrooms 3 small yellow an orange peppers. When he said he wanted gnocchi I added 3 tomatoes and Italian seasoning and garlic (1tsp) When I turned around to text w my sister in law he added... Champagne and Cavendar's Greek seasoning.
