30 Day Vegan Challenge: Day 12 Mothers Day

We had my Momma and Momma in Law over. Pokey smoked brisket, pork butt, chicken and sausage. I made cilantro lime quinoa and spinach and chickpea.

Pokey made potato salad everyone loved it. It has mayo. Womp. I made my own. I used mustard, old bay seasoning and dill. Yummo. He said gross but I loved it.

Then....dessert! I made fruit salad and frozen banana "ice cream" so good.

And then....I wonderful Momma made vegan chocolate cake w a glaze and roasted coconut on top. I added fruit w it. I ate so good today.

Is your fridge a garden or a morgue?

Pokey and I love to grocery shop. It's what we do lol. I really love that he is cool w the fact that I'm not eating meat and don't care for it in the house. I feel it take up space and why do that when I can put veggies in its place! First shelf: almond milk, black berries, cilantro, cherries, yogurt (his) apple sauce that my momma brought over for Angie's kids. I need to give that to her. And BEER!!! Bobby gave it to Pokey Second shelf: Salad stuff. Spinach, spring mix, feta cheese, avocado and tomatoes Third shelf: Green grapes, mushrooms and corn. HEB 5 for $1 Fourth shelf: Eggplant (Pokey's) red grapes, watermelon and cauliflower. Pickled jalapeño. Pokeys choice. Not mine "/ Vegetable drawer: Bell pepper, tomato, broccoli, cucumbers, poblano pepper and small red orange and yellow peppers Counter: FRUIT!!! Bananas, pineapples, apples, pear, lemon and limes. I LOVE COLOR!!!!

This has been a busy good week. Today was a good day a work. Came home. Went grocery shipping. Rode bikes w the kiddos. Yard work w Pokey. Busy day. Dinner I had to keep it raw and simple. I toasted some wheat bread then spread hummus all over lol. One side I used half and avocado w old bay seasoning the other side I used spinach and a tomato. This hit the spot! Idk if I was craving strawberries but these were THE best strawberries I've had in a while. The grapes were fresh too. Dinner was great. Pokey is making himself salmon. We totally made our own dinners lol.
