I love fall for all the squashes. Today we bought pumpkins, acorn squash and butternut squash. I was trying to think of what I should make tonight. The weather was nice today. Kinda chilly. I was thinking soup but I found this recipe for a stew and I said 'sure why not' 1 cooking pumpkin 1 carrot 2 tomatoes 1onion 1plantain 2 cloves of garlic 3 white potatoes 2 tbs oil 2 tbs curry 1/2 tsp cinnamon 1/2 tsp ground ginger (I know I have raw ginger in the pic but the recipe called for ground) 1 scotch bonnet 1 1/2c water Salt and pepper to taste I chop everything before starting. That's just me. Chopping calms me. I love it. In the pot put the oil onion and garlic until translucent. Then add the tomatoes w the spices. It will look like a paste because the tomatoes sweat.
