Sunday dinners

I love having people over for dinner. I love to cook. Our cousins Bejan and Lily came over Sunday and we hung out the whole day. Literally. Church. Lunch. Flying kites. Dinner. Time flys when your kicking it so we decided to make dinner. I love that she will try anything. I made Jamaican beef patties w meatless crumbles and I roasted sweet potatoes. I'm just now becoming a fan of kale. I ate it raw! (Can you imagine) I had made some yam noodles and a homemade sauce w some veggies and served it up. Pokey was organizing the garage and Bejan helped so I knew they were hungry. I made spicy chikn patties for them to make sandwiches. Along with everything else on the table. It was definitely buffet style this Sunday lol. I was worried their boys wouldn't want to eat. Nothing but veggies but they ate. The liked it. That makes me happy. Lily made aquafresca and with the leftover juice we made paletas. Mango and pineapple. So good!

Movie Night:Hungry for Change

Last night we watched Hungry for Change. I love docs. I love docs about food! For me it helps me keep on track with what I'm doing as far as food. Sometimes I think I miss meat but I really don't. I try my hardest not to have processed food in our house. I'm glad Pokey (Husband) is on board. He will eat what ever I make. Last night I wanted Italian. I made some "pasta" I used yam noodles. So good. So lo in carbs it's great. I used bell pepper, mushrooms, onions, garlic and Italian spices. For our personal pizzas I used whole wheat high fiber lo carb tortillas. I love thin crust pizza so for my it was a no brainer. I loaded them w the same veggies I used for my sauce. I used "meatless" pepperoni and dairy free cheese. They were delish!!!
