Cauliflower and lentil tacos

Meatless Monday!!! I was watching a show on Cooking Channel 'How to live to 100' and they made cauliflower tacos. I put my own spin on it ofcourse. 


Add cauliflower to the food processor and break it down until it's kinda like mashed potatoes 


I ended up having to take some of the cauliflower out. I cut an onion up and put it in the pan to brown. I didn't use any oil at all in the recipe. I have an awesome pan lol. 


I added the cauliflower and burrito seasoning to the onions. 

On the show they used a can of tomatoes but I blended my own. 


I mixed everything together to let the water cook out. 


I boiled lentils and added it to the cauliflower. 


Mixed it all together and cooked the water out some more. 


I love corn tortillas. I used them. Cut up some cilantro and limes and put some Valentina on everything. They are so good!

Is your fridge a garden or a morgue?

Pokey and I love to grocery shop. It's what we do lol. I really love that he is cool w the fact that I'm not eating meat and don't care for it in the house. I feel it take up space and why do that when I can put veggies in its place!  First shelf: almond milk, black berries, cilantro, cherries, yogurt (his) apple sauce that my momma brought over for Angie's kids. I need to give that to her. And BEER!!! Bobby gave it to Pokey  Second shelf: Salad stuff. Spinach, spring mix, feta cheese, avocado and tomatoes  Third shelf: Green grapes, mushrooms and corn. HEB 5 for $1  Fourth shelf: Eggplant (Pokey's) red grapes, watermelon and cauliflower. Pickled jalapeƱo. Pokeys choice. Not mine "/   Vegetable drawer: Bell pepper, tomato, broccoli, cucumbers, poblano pepper and small red orange and yellow peppers  Counter: FRUIT!!! Bananas, pineapples, apples, pear, lemon and limes.  I LOVE COLOR!!!! 

Open Faced Sandwich

This has been a busy good week.  Today was a good day a work. Came home. Went grocery shipping. Rode bikes w the kiddos. Yard work w Pokey. Busy day.  Dinner I had to keep it raw and simple. I toasted some wheat bread then spread hummus all over lol. One side I used half and avocado w old bay seasoning the other side I used spinach and a tomato. This hit the spot! Idk if I was craving strawberries but these were THE best strawberries I've had in a while. The grapes were fresh too. Dinner was great. Pokey is making himself salmon. We totally made our own dinners lol.
