Sunday dinners

I love having people over for dinner. I love to cook. Our cousins Bejan and Lily came over Sunday and we hung out the whole day. Literally. Church. Lunch. Flying kites. Dinner. Time flys when your kicking it so we decided to make dinner. I love that she will try anything.

I made Jamaican beef patties w meatless crumbles and I roasted sweet potatoes. I'm just now becoming a fan of kale. I ate it raw! (Can you imagine) I had made some yam noodles and a homemade sauce w some veggies and served it up. Pokey was organizing the garage and Bejan helped so I knew they were hungry. I made spicy chikn patties for them to make sandwiches. Along with everything else on the table. It was definitely buffet style this Sunday lol.

I was worried their boys wouldn't want to eat. Nothing but veggies but they ate. The liked it. That makes me happy.

Lily made aquafresca and with the leftover juice we made paletas. Mango and pineapple. So good!

Jackfruit "beef" Stew

SATURDAY WITH MY PARENTS! Pokey went fishing and I went grocery shopping. I love to hang out with my family. I love them with my entire heart. I called my mom and asked her if she wanted to join me while I picked up a few things from the store. Of course, she said yes. When I get to my parents she says my dad wants tacos from Cristobal. I'm down because they really have great tacos. I got beans and nopales (cactus) Look how cute my parents are. 43 years in February.  I love that they show love to each other.  We ended up going to HEB and I didn't grab much but I got some acorn squash and some okra.  It was a cold Saturday and I know him being on the water plus the wind I know he would appreciate a warm meal when he came home. My mom in law bought us a Ninja Foodi and I have been intimidated by it for almost a year. This is probably the 4th time I have used it. I had one of those meal cheaters, it was beef stew one where you add meat and some veggies.  I added ...

It's May!

I was texting w La and we were talking food and what not. Anyways. It dawned on my that its May. I'm going into my fifth month of being like 90% vegan. It's funny because its not like that 10% is milk and cheese. It's Chic Fil A! Lol. Their sunflower bagel chicken breakfast biscuit is crack! At work we had a luncheon and they make the best steak. I had a couple of bites and I gave it to Patty. I didn't have a taste for it..what...crazy in know. Another time we had family over and I bought barbacoa and carnitas. I was so sad face. The barbacoa was not delish to me any more. Carnitas were great but I could do w out. I just was always a fan of pork. But I haven't had bacon yet. Go figure. We started this journey w juicing. And then after I thought "no meat/dairy" till the end of March. I wanted to get blood work done to see if it was worth it. It was. I lowered my cholesterol by 13 points! I think that's great. Plus...I feel great. I'm very ...

21 Day Sugar Detox

Monday after Super Bowl some friends and I started this detox. I was nervous, excited, anxious and scared. I didn't know what to expect. It went well.  I are a lot like this. No sugar meant no bread or processed foods. I lost 9lbs. It felt good. It did change my way of thinking about sweets. I don't crave them. I guess that was the point lol.  I'm glad it's over but I've been following the diet for the most part.
